Blueberry Coconut Steel Cut Oatmeal

Ingredients

- 1 1/2 cups steel cut oats

- 1/2 teaspoon ground ginger

- 1 teaspoon baking powder

- 4 cups unsweetened vanilla almond milk

- 2 cups light unsweetened coconut milk

1 1/2 cups fresh blueberries

- 1/4 cups dried blueberries

- 1/4 cup unsweetened coconut flake

- 2 cups fresh blueberries for sauce

Directions

Pre-heat oven o 350 degrees. Combine all ingredients, except the blueberries for the sauce into a large bowl adding the blueberries and coconut last. Bake fore about one hour. The oatmeal will appear not done, but remove it from the oven and let it cool to room temperature. Refrigerate overnight for best results. It will thicken nice and become a perfect consistency. 

For the sauce, heat the blueberries with a splash of water over medium/high heat. Once they begin sizzling, reduce heat to medium and cook for about 5 minutes until saucy. Mash the blueberries for a soupy consistency. Drizzle the blueberry sauce over the oatmeal before serving.
